Lambiek Fabriek is a young and somewhat rebellious brewery, with a ram's head on the label. Since 2016, Jo Panneels and Jozef Van Bosstraeten have been making lambic beers with character, first as cuttings, since 2021 also with their own brewing installation. From classic old geuze and kriek to playful creations with grapes, berries, rhubarb, roasted malt and more ingredients. You can recognize them easily: all their products end in -Elle

Always with an angle off and a hefty dose of Brettanomyces.

Story

"No Brett, No Glory," sounds the slogan of Lambiek Fabriek, with a defiant ram's head on the label as a recognizable symbol. That logo and the round labels gives Lambiek Fabriek its own identity.The names of their beers invariably end in "-Elle," giving Lambiek Fabriek a solid character in the lambic landscape.

The brewery was founded in 2016 by Jo Panneels and Jozef Van Bosstraeten. Then still in Fabrieksstraat, hence the brewery's name. Their first feat? The Oude Geuze Brett-Elle, named after Brettanomyces, the wild yeast floating in the air here. Back then, Lambiek Fabriek was still a cutting plant, but since 2021, Jo and Jozef have been brewing their own. In their new location, they have their own brewing equipment and control the entire process: from brewing and aging the lambic in oak barrels and foeders to blending and re-fermentation in the bottle.

Besides the classic old gueuze and old kriek, the brewers surprise with creations such as Muscar-Elle with grapes and berries, Rhub-Elle with rhubarb, Pluri-Elle with a mix of berries and Caram-Elle with roasted malt. Always playful and a touch daring.

It's not really a factory, but it's in the industrial neighborhood on the Brussels-Charleroi Canal and it spells it right: Lambic Factory.
