After more than a century of silence, things are buzzing again in the Odilon Geuze cellars in Bever. Thomas Singelé is brewing lambic and putting fresh fruit lambics on the market, such as Mirabel-Lambiek, Framboise and Schaarbeekse Kriek. The name refers to Odilon Jouret, the last brewer of brewery Jouret who sold the business in 1904. Tasting can be done at Café Odilon, the ideal starting point for cyclists and hikers.

Story
111 years after the closure of brewery Jouret in Bever, life sounds again in the cellars. Geuze brewer Thomas Singelé filled his first barrels with wort there, breathing new life into the old brewery from 1812 as a Geuze brewery. The name Odilon refers to Odilon Jouret, the last brewer in the family who sold the brewery in 1904. Operations continued until 1910, but then it remained quiet. Until now.
In the cellars today, lambic matures on some 70 oak barriques from the Bordeaux region, good for a stock of over 25,000 liters. Since the fall of 2024, the first fruit lambics have been on the market: Odilon Mirabel-Lambiek, Odilon Framboise and Odilon Schaarbeekse Kriek.
You can taste them in the cozy Café Odilon, Thomas' cycling and walking café in the brewery. Soon you will even be able to stay there overnight, as there will also be a vacation home. The ideal base from which to discover Lambic Country in all its scents and flavors.
